Dinners I Made For My Family of 5 This Week

Here are some yummy dinners that I made for my family of 5 this week! I used to blog recipes all the time and realized how much I missed sharing my daily eats with you. Feeding a family of 5 can get expensive but here are some meals I made to help save your wallet. All ingredients are bought from either Walmart or Publix. Do you want to see more of these? Butter Chicken

Ingredients 

Marinade:

  • 1/2 cup plain yogurt full fat
  • 1 tablespoon grated fresh ginger
  • 6 cloves garlic minced
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 pound boneless skinless chicken breasts cut into bite-size pieces

Sauce ingredients:

  • 1 tablespoon olive oil
  • 1/4 cup butter divided
  • 1 medium onion chopped
  • 1 (15 ounce) can tomato sauce see note
  • 1 cup heavy/whipping cream
  • 1 tablespoon sugar
  • 1 teaspoon garam masala
  • 1 teaspoon salt see note
  • 1/4 teaspoon cayenne pepper or to taste

For serving:

  • Chopped fresh cilantro
  • Cooked rice (try basmati or jasmine)
  • Naan

Spaghetti Garlic Toasts

Ingredients:

  • 1 jar marinara sauce
  • 1lb ground beef
  • 1 package shredded mozzarella or shred your own
  • 1 package garlic bread (frozen or make your own!)
  • 1 pack spaghetti noodles
  • (onions, green pepper, mushrooms, fresh garlic-optional)
  • salt/pepper/garlic salt/olive oil

Directons:

  1. Preheat your oven and bake your garlic bread to package directions
  2. While bread bakes, brown your ground beef in a pan. Add in the sauce and/or any veggies you wish. Remove from heat and set side.
  3. You will also want to boil your spaghetti noodles during this time as well! Set side.
  4. When the garlic toasts are done, assemble by adding noodles, sauce, and cheese on top,
  5. Bake for an additional 2-5 minutes and enjoy!

Sheet Pan Curry Pork Chops with Green Beans and Potatoes

Ingredients

  • 1 pack bone in pork chops (enough for every family member)
  • 1 package little potatoes with herb seasoning (Little potato co brand)
  • 1 package of green beans
  • Garlic salt/salt/pepper/ olive oil
  • 1 tbsp curry seasoning

Directions

  1. Preheat oven to 400.
  2. Coat pork chops with olive oil and season with curry, black pepper, and garlic salt on both sides-lay on a sheet pan.
  3. Toss little potatoes with olive oil and herb packet-lay on sheet pan.
  4. Open green beans package and pour onto sheet pan. Drizzle with olive oil and season with salt and pepper.
  5. Bake for 20 minutes or until pork chops are well done.

Sheet Pan Chicken Quesadillas

Ingredients:

  • one package medium tortillas
  • Shredded cheddar cheese
  • 2 large chicken breasts, cooked and shredded (I cooked mine in the air fryer)
  • Veggies – optional but I used onions and jalapenos on half since the kids hate those
  • Taco seasoning packet

Directions

  1. Preheat oven to 375 and assemble tortillas onto a sheet pan.
  2. Mix shredded chicken with taco seasoning and lay onto tortillas.
  3. Layer with shredded cheese and veggies and cover with top tortillas flaps.Set something heavy on top so the tortillas stay flat.
  4. Bake for 15 miutes and enjoy!
