One Dish Oven Baked Chicken Fajitas

Some days are more hectic than others so I am constantly finding ways to skip a step when making my weekly dinners. Yes, I actually homecook dinner every night for my family (unless we choose to go out)! I enjoy it so much and cooking is my therapy.

However, going into the 3rd trimester, I get a little tired every now and then so speeding dinner up is very helpful. I decided to make one dish chicken fajitas to keep things pure and simple. I actually enjoyed them baked moreso than seared in a cast iron skillet on the stove because, to me, they were juicier!

All you need is one small onion, a bell pepper, and a few frozen chicken tenderloins (enough to feed however many people you need), and fajita seasoning… and of course tortillas! However, sometimes, I prefer to put my fajita chicken on a bed of brown rice!
