4 Dinner I Made For My Family of 5 This Week

This week, I wanted to change things up and make some very differnt dishes. I was craving Asian, Italian, Mexican, and American foods haha! This is what I chose and they were all a hit with the family.

Mongolian Beef Noodles

Ingredients

  • 1 lb lean ground beef
  • 1 haed broccoli chopped
  • 4 tsp fresh grated ginger
  • 6 cloves garlic, minced
  • ½ cup brown sugar
  • ½ cup low-sodium beef broth
  • ½ cup low-sodium soy sauce
  • ¼ cup hoisin sauce
  • ½ tsp black pepper
  • 8oz udon noodles

Directions

  1. Heat a skillet over medium-high heat. Add the ground beef and cook until browned, about 5 minutes. Add the ginger and garlic during the last 2 minutes of cooking. Add broccoli.
  2. Drain any excess fat from the beef. Add in noodles.
  3. Stir in the brown sugar, beef broth, soy sauce, hoisin sauce, black pepper. Mix well to combine.

Cheeseburger Sliders

Ingredients

  • 2 lb lean ground beef, (90/10 or 93/7 fat content)
  • 1/2 Tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 large yellow onion, finely diced
  • 8 slices medium cheddar cheese
  • 6 oz medium cheddar, shredded (or used more sliced cheese)
  • 24 dinner rolls, (or use 2 packs of 12)
  • 2 Tbsp unsalted butter, melted, plus more to grease baking sheet
  • 1 Tbsp sesame seeds

Instructions

  • Preheat oven to 350˚F. Butter the bottom of a rimmed baking sheet.
  • Place a large skillet over medium/high heat with 1/2 Tbsp olive oil. Add diced onion then 2 lbs ground beef and break up with a spatula. Season with 1 tsp salt, 1 tsp black pepper, and 1 tsp garlic powder. Sautee over medium/high heat, breaking up the beef and cook just until cooked through then remove from heat.
  • Tilt skillet to spoon off and discard excess fat.
  • Cut buns in half. Place bottom half of dinner rolls on buttered baking sheet and line bread with sliced cheese. Spread ground beef mixture evenly over the sliced cheese, using the back of a spatula to square off the edges. Cover the ground beef with 6 oz of shredded cheddar.
  • Place the top of buns, cut-side down, over the burgers. Brush tops with 2 Tbsp melted butter and immediately sprinkle tops with sesame seeds. Bake at 350˚F for 12-15 minutes, or until cheese is melted and tops are golden brown.

Chicken Alfredo Pasta

Ingredients

  • 16oz fettuccine noodles or noodles of choice
  • 1.5 cup heavy whipping cream
  • 1/2 cup shredded parmesan cheese
  • 1/2 stick butter
  • 4 chicken breasts
  • 2 tbsp olive oil
  • 1/2 tsp garlic salt
  • 1/2 tsp oregano
  • salt pepper to taste

Directions

  1. In a bowl, mix olive oil, garlic salt, and oregano with chicken breasts, coating them evenly. Add olive oil to a pan and dry each chicken breast until done. Remove from pan.
  2. Add in butter, heavy cream, and cheese to make the sauce. Season with garlic, salt and pepper as needed.
  3. Add in cooked noodles to the sauce, tossing until noodles are coated.
  4. Cut chicken breasts into slices and place on top of a bed of noodles to serve.

Mexican Chicken and Rice Casserole

Ingredients 

  • 1 tablespoons butter for greasing the baking dish, or oil
  • 2 cups cooked chicken cubed or shredded
  • 3 cups jasmine rice or basmati or brown rice, cooked or leftover rice
  • 15 oz black beans rinsed and drained
  • 11 oz corn drained, or Mexicorn, or frozen corn
  • 10 oz diced tomatoes and green chillies
  • 2 cups salsa mild
  • 1 cup sour cream
  • 1 cup sharp cheddar cheese grated
  • salt and pepper to taste
  • 1 small red onion chopped
  • 1 cup Mexican Cheese grated, or to taste
  • ¼ cup cilantro chopped for garnish

Instructions 

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch casserole dish with butter or nonstick spray. This helps prevent sticking and gives the edges that irresistible golden finish.
  • Mix the Filling: In a large mixing bowl, combine the cooked ricecubed chickenblack beanscorndiced tomatoes with green chiliessalsasour cream, and sharp cheddar cheese. Give everything a good stir until it’s fully mixed and creamy.
  • Assemble the Casserole: Pour the mixture into your prepared baking dish and spread it out evenly. Sprinkle the chopped red onion on top for a little crunch and added flavor.
  • Bake: Place the casserole in the oven, uncovered, and bake for 30 minutes. You want it hot and bubbling around the edges.
  • Add the Cheese: Remove the dish from the oven and sprinkle the Mexican cheese blend over the top. Return it to the oven and bake for another 10 minutes, or until the cheese is fully melted and lightly golden.
  • Garnish and Serve: Top with freshly chopped cilantro before serving. Add a squeeze of lime or your favorite hot sauce for an extra kick! Serve with salsa and avocado slices. Enjoy!
