Spicy California Shrimp Stack Recipe
My family loves sushi.. we go out to eat it maybe once per week-no lie! I always look for a chance to make my own at home because my sushi habit can get a little expensive (to say the least). Also, I have a huge passion for cooking!
I found this awesome recipe on Pinterest via SkinnyTaste called Spicy California Shrimp Stack that is basically a deconstructed California Sushi Roll… with a kick to it!
The ingredients were so wholesome and simple, I had to give it a try! Plus, it is super easy to do.. and those who have rolled sushi before know it takes some practice. This recipe was very much a no brainer if you know how to stack things.

- 1 1/3 cups cooked short-grain brown rice (from 1/2 cup uncooked)
- 2 tablespoons rice vinegar
- 8 ounces cooked shrimp, peeled and tails removed
- 1 cup diced cucumber (about 1 small)
- 1 teaspoon chopped fresh chives
- 1/2 cup mashed avocado (about 1 medium)
- 4 teaspoons Furikake (such as Eden Shake or use sesame seeds)
- 4 teaspoons reduced-sodium soy sauce (or gluten-free)
- 4 teaspoons mayonnaise
- 1 teaspoon sriracha sauce
