Egg, Avocado, Bacon McMuffins
So I have been craving McMuffins like they are going out of style. But, since I do NOT and will NOT eat anything McDonalds, I decided to make my own healthier version. It was actually pretty simple and took around ten minutes-and best of all, it can be meal prepped (or even frozen) for the week and reheated each day!
You will need:
- English Muffins (I used Ezekiel brand)
- Eggs
- Turkey bacon or regular bacon
- Ripe avcadoes (1/2 avocado per sandwich you make)
- Cheese (optional-I did not use any-didn’t need it!)
Directions:
Toast your English muffin roughly for 3-5 minutes.
Mash your avocado, add in a little salt, pepper, and garlic, and spread on one side of the muffin.
Fry an egg while your muffin is heating up and place on the avocado layer.
While your egg is frying and your muffin is heating, bake/microwave some bacon for 5-7 minutes. When it is finished, later it on top of the egg. The bacon will take the longest so start baking it soon. Broil it to speed up cooking.
