Easy Weekly Meal Prep: Tuna Salad, Pita Chips, & Apples

This week’s meal prep is pretty simple and easy to make. It is honestly something I have been eating for years since I am a HUGE seafood/fish fan anyway.

I decided to take it back old school and do tuna & egg salad with pita chips and sliced apple. I love taking my chips and dipping them into the tuna mixture-or they are great alone. I used a Fuji apple, Stacy’s Pita chips, and Starkist tuna to make my meal prep. To make four days of meal prep (my typical amount of prep days), it maybe costed me $5 for those 4 meals: TOTAL. Talk about easy and cheap!

Tuna has so many benefits and some may question me eating it during pregnancy. I have zero worries! It is recommended that pregnant women consume no more than 2-3 servings per week. However, the amount of tuna split across these four meals are around 2-3 servings, as the egg helps make some of the “fluff.”

To make my tuna for 4 days, I used the following:

  • 3 packets lemon pepper tuna
  • 3 eggs, boiled
  • 1/4 cup chopped onion
  • 1/4 cup chopped pickle
  • 1 tbsp Greek yogurt
  • 1 tbsp. mustard
  • 1/2 tsp garlic powder
  • salt/pepper to taste

Simply stir all ingredients and store in an air tight container (or place into your meal prep bowls). Tuna stays fresh in the fridge for typically 3-4 days so I usually freeze the last 2 containers, just as an extra safety measure since I am pregnant.

When you are ready for each meal, just slice an apple and throw some pita chips into your meal prep container. If you want to precut your apple slices, you can use lemon juice on your apples to help keep them fresh!
