Peanut Butter Banana Protein Blender Muffins

I am obsessed with muffins in the morning. Actually, I am quite obsessed with any type of pastry food! But unfortunately, most muffins have lots and lots of flour and sugar which tend to make them filled with empty calories. I wanted a GOOD and HEALTHY muffin to treat my family to, but without sacrificing any of the yummy taste.

I came up with these delish protein peanit butter and banana muffins one night and both my son and my husband wanted seconds! There’s no flour or oil in these muffins and they are filled with PROTEIN!

Now, here’s the recipe!

INGREDIENTS

  • 2 ripe bananas
  • 2 large eggs
  • 1/2 cup vanilla almond milk
  • 2 cups rolled oats
  • 1/4 cup MRM Egg White Protein Powder in French Vanilla (get 40% off with code SIA at checkout)
  • 3/4 cup vanilla Greek yogurt
  • 1/2 cup pure maple syrup (honey works as well)
  • 1/2 cup peanut butter
  • 1 tsp. vanilla extract
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ¼ tsp. salt

DIRECTIONS

  1. Preheat oven to 400 degree.
  2. Combine ingredients in a blender and blend until the batter is smooth.
  3. Pour batter into a greased muffin tin about 3/4 of the way.
  4. Bake for 15 minutes.
  5. Let cool before removing from pan.
