Fresh Chicken & Cheese Tostadas

Last night, I was craving Mexican food again as usual and wanted something clean, but filling. I decided on making fresh chicken tostadas. However, I HATE corn tortillas with a passion.

Yeah, I know-it’s basically what makes a tostada a freakin’ tostada.

Anyway, I decided to go with flour tortillas and it was the BOMB.com! I mean, a photo is worth a thousand words, right?

All you need to make one tostada is:

  • 1 small flour tortilla (or corn, whatever)
  • 1 chicken tenderloin, seasoned, shredded, and baked (I used McCormick’s Chipotle seasoning)
  • 1 tbsp shredded Mexican blend cheese (I used cheddar here)
  • 1/2 roma tomato, chopped
  • freshly chopped lettuce
  • sour cream or Greek yogurt to top

I baked my tortilla at 350 degrees for about 5-7 minutes to give it a slight crisp before piling it on with chicken, cheese, veggies, and sour cream.

The result?

MOUTHWATERING.
