Easy Breakfast Meal Prep: Apple Cinnamon Oatmeal and Boiled Eggs

This past week, I not only meal prepped my lunch, but decided to prep my breakfast in advance as well. Boy, am I ever so glad that I did because my entire family became SICK. We ended up taking little man to the ER which resulted in us finding out he had an ear infection , upper respiratory infection, and inflammation in his left lunge near his heart. Two shots and a round of antibiotics later, he is feeling much better.

Unfortunately,  I am still battling my crud as you pregnant ladies already know that there’s not much that can be done or taken to help treat sicknesses during pregnancy.

Ok-back to the meal prep! I love oatmeal and since I basically eat it almost everyday (when I am not chowing down on bacon and eggs), I decided to make a large batch of it. My oatmeal flavor of choice was Apple Cinnamon…. mmmmm..

I paired my oatmeal with a boiled egg for added protein. This meal looks and is practically simple, but it is so tasty and easy to reheat.

To make the oats, here’s what you will need:

  • 4 cups water
  • 1 1/3 cups of steel cut oats
  • 1 tbsp Stevia
  • 1 tbsp cinnamon (more or less-I love mine very cinnamon-y)
  • 1 apple, cored and cubed (any apple you want)

Directions for cooking on stovetop:

  1. In a large saucepan bring the 4 cups water to boiled. If you want softer apples, add your apples in with this step-if not, add your apples in the next step.
  2. Stir in 1 1/3 cups steel cut oats, cinnamon, and Stevia.
  3. Cover and simmer for 25 to 30 minutes or until the oats are just tender and the liquid is nearly absorbed.

As for your boiled eggs, you may boil them with whichever method you prefer.

After cooking, divide between containers and store in the fridge. This will be good up until about a week.
