Double Chocolate Banana Protein Cake

I made the most amazing chocolate cake last night. Since I have been pregnant with my little girl, I have had chocolate cravings like I have never had!
This cake certainly hit the spot and much more-my son and husband were dying for seconds! To be honest, it wasn’t too unhealthy either.

The cake turned out to be the MOIST, tastiest cake I had ever eaten-without frosting anyway 🙂 I even added a few sprinkles on top to give it a fun vibe. You wouldn’t know this cake was packed with protein by how good it tasted-not saying all protein powder recipes are terrible because I make some pretty good ones! But some recipes using protein powder tend to dry out a bit. Oh no-not THIS.

Ingredients
  • 3 medium ripe bananas
  • ¾ cup light brown sugar
  • ½ coconut oil
  • 1 tsp vanilla
  • 1 large egg
  • 1 cup whole wheat flour

  • ½ cup cocoa powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup semi sweet chocolate chips
  • 1/4 cup chocolate chips (for topping)
  • Sprinkles (optional)
Instructions
  1. In a large bowl, mix the bananas and brown sugar until the bananas are mashed and the sugar is dissolved.
  2. Add the coconut oil, vanilla, and egg. Mix together.
  3. In a separate bowl, mix together the wheat flour, protein powder, cocoa powder, baking soda and salt. Add the dry ingredients to the wet ingredients and mix until incorporated.
  4. Fold in the semi-sweet chocolate chip. Pour batter into a greased 8×8-inch baking dish. Sprinkle the top with mini chocolate chips.
  5. Bake at 350 degrees Fahrenheit for 25 to 35 minutes. Check the center with a toothpick to determine doneness. Best eaten warm.
