Banana Nut Protein Baked Oatmeal

Happy Monday! I have yet another delicious recipe to share with you guys that is packed with protein.

Every morning I usually have one of two things for breakfast: Eggs and bacon or oats. Oats can kind of get a little boring so I like jazzing different recipes up so that I can try new things. After all, healthy never has to be boring!

Using my new favorite protein powder-MRM Egg White Protein Powder-I decided to make a baked oatmeal dish that reminded me of banana nut bread. I LOVE banana nut bread and my hunger for carbs have been off of the charts so I decided to come up with a healthy way for me to still enjoy that banana nut taste-without all of the flour, sugar, and extra calories.

Here’s the recipe!

  • 2 cups old fashioned rolled oats
  • 1/4 cup MRM Egg White Protein Powder {Get 40% off all MRM supplements with code SIA at checkout!}
  • 1/2 cup chopped pecans
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tsp. ground cinnamon
  • 1 cup almond milk
  • 1 large egg (may sub 1/4 cup applesauce if you do not want to use egg)
  • 2 bananas, one mashed and one sliced
  • 4 tbsp peanut butter
  • 4 tbsp pure maple syrup (honey also works well)
  • 1 tsp vanilla extract

Directions:

  1. Preheat your oven to 375 degrees and grease a 9×9 or 8×8 baking dish.
  2. In a large bowl, combine all ingredients thoroughly together. It won’t be smooth, so no worries there!
  3. Pour the mixture into the greased dish and bake for 30 minutes.
  4. Top with the remaining sliced banana.
